1 lb bacon -- cut into small pieces 1 c chopped onion 2 c chopped celery 3/4 c flour -- divided 2 can stewed tomatoes -- cut up (16 oz) 48 oz Spicy V-8 vegetable juice 4 c beef stock 2 T sugar 1 T dried oregano 4 c romaine lettuce -- chopped fine
Brown bacon, remove from pan and set aside. Reserve 1/2 cup of the drippings. Saute onion and celery in drippings until tender. Mix in 1/2 cup flour. Add tomatoes, V8 juice, beef stock, sugar, oregano and reserved bacon. Add additional 1/4 cup flour with a little water to thicken soup if desired. Soup should be consistency of thin sauce. Simmer 25-30 minutes. Add lettuce to soup in pot and serve immediately or top individuals servings with lettuce when serving. Makes 15 servings.
