DRIED PEA SOUP
2 cups dried peas 2 qt. water or ham broth 1 large onion, sliced 2 TBS butter 1 stalk celery, cut up salt and pepper to taste 1 cup sliced potatoes 1/4 cup bread crumbs, browned in 2 TBS butter to garnish.
Soak peas overnite in plenty of water; drain and put them in the ham broth and boil til tender. Brown the onions in butter and add to peas along with celery and potato, and cook til they too are tender. Can mash a bit with a masher before serving. Brown the crumbs in butter and sprinkle on top of each bowl when you serve the soup.
