1 egg beaten 1/4 cup milk 1 cup soft bread crumbs 1/2 teaspoon salt 1/2 pound ground beef 1 28 ounce can tomatoes 2 cups water 1 1/2 cups chopped celery with leaves 1 cup finely chopped onion 1 cup diced potatoes 1/2 cup sliced carrot 1 1/2 teaspoons salt dash bottled hot pepper sauce 1 cup shredded American cheese
Combine first four ingredients. Add meat; mix well. Chill 30 minutes. Mean while, in saucepan combine next 8 ingredients. Cover and simmer 30 minutes. Shape meat in to 16 meatballs; add to soup. Cover and simmer 10 minutes more. Serve soup in bowls; top with cheese.
Makes 8 servings.
