1 pound leaf lettuce, rinsed well
Place moist lettuce in a saucepan; cover and cook about 6 minutes. Drain then whirl in blender. In saucepan, melt 2 tablespoons butter; add 1 tablespoon grated onion and sauté for 3 minutes. Stir in 2 tablespoons flour and cook until blended. Gradually stir in 4 cups milk. Season to taste with salt, pepper and paprika. Add the lettuce and heat the soup well. Serve sprinkled with grated Parmesan cheese or sieved egg yolk. Makes about 5 cups.
