French Onion Soup Number of Servings: 5 Serving Size: 1 cup
large onion, sliced 3 ea --- low-calorie margarine 2 Tbsp --- sugar 1/4 tsp --- all-purpose flour 1 Tbsp --- white wine 1/4 cup --- low-fat, low-sodium chicken broth --- 10 oz low-fat, low-sodium beef broth --- 10 oz water 1 1/2 cups --- French bread, toasted 5 slices --- shredded light Swiss --- 4 oz grated Parmesan cheese 1/4 cup ---
1 Combine the onions and margarine in a 3-qt. casserole. Cover. 2 Microwave 6-9 minutes on High until the onions are soft and translucent. 3 Stir in sugar, flour, wine, broth and water. Cover microwave 4-6 minutes on High or until heated through. 4 Ladle soup into individual casseroles. Top with bread slices. Sprinkle with cheeses. Microwave 5-7 minutes on Medium-High (70% power) or until cheeses melt.
