Cheddar Chowder
2 TBS butter 2 small onions, sliced 2 tsp flour 2 small potatoes, diced 1 cup chicken stock 4 cups milk 1/4 tsp celery seed 1/2 tsp dry mustard 1/2 tsp hot paprika 1 1/2 cup grated sharp cheddar salt and pepper to taste croutons
Saute onion in butter. Sprinkle flour over. Stir in potatoes, stock, milk and celery seed. heat to boil. Reduce heat and cover. Simmer on low for 25 minutes. Stir in mustard, paprika. Cook, uncovered, 5 minutes. Remove from heat. Stir in cheese, salt and pepper to taste. Garnish with croutons.
