Texas Prawn Stew from Colavita, USA 2 Tbsp. COLAVITA EXTRA VIRGIN OLIVE OIL 3 cloves garlic, minced 1 jalapeno chile, minced 2 medium carrots, sliced 1 green bell pepper, chopped 1 medium zucchini, sliced 3 Roma tomatoes, peeled and chopped 1 cup sliced button mushrooms 1/2 cup water 2 (19 oz.) cans kidney or cannellini beans, drained 12 flat-leaf parsley sprigs, chopped 2 tsp. Johnny Ciao's BarBQ Blues (1 tsp. paprika and 1 tsp. chile powder) 1 pound large shrimp or prawns, shelled and deveined 2 cups basmati rice, cooked Heat olive oil in a large skillet over medium heat. Add garlic, chile, carrots and bell pepper and saute 5 minutes or until soft. Add zucchini, tomatoes, mushrooms, water and beans. Cover and cook over low to medium heat 10 minutes, stirring occasionally. Add parsley, Johnny Ciao's BarBQ Blues and shrimp. Simmer, covered, 3 minutes or until shrimp turn pink.
