Chicken Enchilada Soup
2-sticks margarine or butter
1-medium onion, chopped
2 tsp. chopped garlic
1-1/2 cups flour
16-cups chicken broth
3-tsp. paprika
1-tsp. salt
3-tsp. season all
2-tsp. cumin
2-pints sour cream
1-medium can chopped green chilies
1-lb. Cooked chicken
Tortilla chips, crushed
Green onions, sliced
Colby jack cheese
Preparation
Melt margarine and sauté onion and garlic until transparent.
Add flour and lightly brown. Add broth and stir until smooth.
Add spices, sour cream, green chilies, and chicken. Mix well.
Simmer 30 minutes.
To serve: Place crushed tortilla chips, green onions, and cheese in bowls.
Fill with soup.
