PEA AND HAM SOUP with smoked weiner sausage
ingredients
1 ham hock large or 2 small 2 leeks trimmed sliced using white and green parts 1 celeriac diced small 1/2 bunch celery sliced fine 1 large diced potato 2 cups green split peas enough water to cover ham hock by a couple of inches.. 10 smoked weiners [or good quality lean hot dogs] 1 cup frozen peas method
place ham hock and water in large pot... and bring to the boil simmering covered for 1 1/2 hours or until meat starts to fall from bone.. remove meat from water and trim of all fat and skin.. and discard.. dice up the meat and put aside in the refrigerator.. place the liquid in the fridge in the pot when cooled and leave overnight.. then scrape off all fat... add split peas and all vegetables except for the frozen peas.. in pot with stock .. and bring to the boil and simmer covered for many hours.. anything from 2hours ~ or for as long as you like.. the longer the better ~ stirring occasionaly.. adding good amount of pepper.. to taste..
10 minutes before serving add diced ham hock meat.. and the hot dogs/weiners cut into 1 inch lengths.. and serve with crusty bread...
each day this soup is kept [up to 4 days], the better it tastes.. so make plenty..
