1/2 cup chopped onion 1/2 cup chopped celery 1 clove garlic, minced 2 tablespoons oil 1 6 ounce can tomato paste 1/4 cup long grain rice 1 teaspoon sugar 1 bay leaf 1/4 teaspoon dried basil, crushed dash of bottled hot pepper sauce 1 6 1/2 or 7 ounce can tuna, drained and flaked
In a large saucepan cook onion, celery, and garlic in oil till onion and celery are tender but not brown. Stir in tomato paste, rice, sugar, bay leaf, basil, hot pepper sauce, 4 cups water, and 1 teaspoon salt. Bring to boiling. Reduce heat; simmer, covered 30 minutes. Stir in tuna. Heat threw. Remove bay leaf.
Makes 4 servings.
