POTATO AND LEEK SOUP
this is such a perfectly lovely soup... beware of putting too much liquid ~ it should be thick and chunky
ingredients:-
1 litre chicken stock ~ or water and stock powder... 3 sliced leeks [white part only] 1kg.. floury potatoes diced 300 gms sour cream 2 cups grated emmenthaler [swiss] cheese season to taste
method:-
place liquid, potatoes and leeks in saucepan and bring to the boil ~ simmer for 30 minutes mash with a potato masher... so it is chunky ~ add seasoning to taste...
serve with crusty bread sour cream and the cheese... to be added as desired...
