Incredible Instant Orange Java Mix
2/3 cup instant dry coffee 1 cup sugar 1 teaspoon PLUS a pinch of dried crushed orange peel 1/4 teaspoon cinnamon
Place all dry ingredients in a blender or food processor and mix until they have the consistency of a very fine powder. Use 1 to 2 teaspoonsful of the dry mix to one coffee mug of hot water. Store the mixes in air-tight containers

Mocha Cappuccino Mix #1
1 c. powdered instant creamer 1 c. cocoa 2/3 c. instant coffee granules 1/2 c. sugar 1/2 tsp. cinnamon 1/4 tsp. nutmeg
Combine all ingredients. Store in an airtight container. Makes 33 servings. A nice gift. To serve: place 1 tbsp. plus 1 tsp. in a cup and add 1 cup boiling water. Stir well.

Jambalaya Mix in a Jar
Makes three 1 plus cup containers
3 C. uncooked long-grain rice 3 T. dried minced onion 3 T. dried parsley flakes 4 tsp. beef bouillon granules 1 T. dried minced chives 1 T. dried celery flakes 1 1/2 tsp. pepper 3/4 tsp. cayenne pepper 3/4 tsp. garlic powder 3/4 tsp. dried thyme
In a large bowl, combine all ingredients. Divide evenly among three airtight containers (there will be a little over 1 cup in each container). Store in a dry, cool place for up to 6 months.
Jambalaya
In a saucepan, bring 2 cups water and 1/2 cup chopped green bell pepper to a boil. Stir in one portion of the dried mix; return to a boil. Reduce heat, cover and simmer for 18 to 20 minutes, or until the rice is tender.
In another saucepan, heat 8 ounces of tomato sauce and 1 pound of fully cooked, smoked sausage that has been cut into 1/4-inch slices.
Meanwhile, in another saucepan, cook 1 pound of medium-sized, peeled, de-veined shrimp in water until pink and cooked through. Drain. Stir shrimp into sausage mixture. Spoon rice onto plates and spoon the sausage-shrimp mixture on top. Makes 4 to 6 servings.

Onion Soup Mix
3 onion bouillon cubes, crushed 1 beef bouillon cube, crushed 2 tsp. cornstarch 1/3 cup instant onion flakes 2 dashes pepper
Put all ingredients in a small sandwich bag. Seal well and store in cool, dry place.
To use: Empty package into a pot and gradually stir in 4 cups cold water and 1 Tbsp. butter. Bring to boil, reduce heat and cover. Simmer 20 minutes. Ladle soup into oven proof bowls, sprinkle with croutons or toasted bread. Then add one slice provalone cheese. Briefly put bowls under a broiler to melt cheese. Serve. Makes 4 1-cup servings.
Onion Dip: Mix one package onion soup mix with 2 cups sour cream. Chill before serving.

Love Soup in a jar 18 cubes beef bouillon 1/4 cup dried minced onion 1/2 cup dried split peas 1/2 cup uncooked twist macaroni 1/4 cup barley 1/2 cup dry lentils 1/3 cup long-grain white rice 1 cup uncooked tri-color spiral pasta Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jars with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar. Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Cajun Seasoning
2 T. chili pepper 2 T. paprika 2 1/4 tsp. granulated garlic 1 1/2 tsp. kosher salt 1 1/2 tsp. dry oregano 1 1/2 tsp. dry thyme 1 T. cayenne pepper 3/4 tsp. fresh ground black pepper
Combine all ingredients in a mason jar and shake well. Makes about 1/2 cup.

Blackening Spice Mix
1 tsp. ground basil 1 tsp. ground thyme 1 tsp. garlic 1 tsp. white pepper 1 tsp. black pepper 1 tsp. salt (sea salt is better) 1 teaspoon onion powder 2 tsp. cayenne pepper 1 tsp. Paprika
Mix all ingredients together. Place in an empty used spice bottle or jar for storage.

Dreamsicle Cookie Mix
1/2 cup Tang instant breakfast drink powder 3/4 cup sugar 1-1/2 cups vanilla chips 1-3/4 cups flour mixed with 1/2 tsp. baking soda and 1/2 tsp. baking powder
.Layer ingredients in jar in order given. Press each layer firmly in place before adding next ingredient.
Recipe to attach to jar: Empty cookie mix in a large mixing bowl; stir to combine. Add 3/4 cup softened butter, 1 egg slightly beaten and 1 tsp. vanilla; mix until completely blended. If dough is too dry, stir in just enough milk or water to make of cookie dough texture. Roll heaping tablespoonfuls into balls. Place 2 inches apart on a lightly greased baking sheet. Bake at 375º for 12 to 14 minutes or until tops are very lightly browned. Cool 5 minutes on cookie sheet. Remove to wire racks to cool completely. Yield: 2-1/2 dozen.

Cowboy Cookie Mix
1 1/3 cup quick oats 1/2 cup firmly packed brown sugar 1/2 cup sugar 1/2 cup chopped pecans 1 cup chocolate chips
Combine the next four ingredients together: 1 1/3 cup flour 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt
Layer ingredients in order in a 1 quart, "wide mouth" canning jar. Press each layer firmly in place before adding the next ingredient. Decorate jar for gift giving and attach card with the following instructions: Cowboy Cookie Mix In A Jar empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly blend mix. Add 1 stick butter or margarine, melted, 1 egg, slightly beaten, and 1 teaspoon vanilla extract. Mix until completely blended. You may need to finish mixing with your hands. Shape into balls the size of walnuts. Place 2 inches apart on sprayed baking sheets. Bake at 350ºF for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to racks to finish cooling.

Chocolate Chip Fudge Cookie Mix
1 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 1/4 cups rolled oats 1 chocolate bar -- (5.5 ounce) 1/2 cup white sugar 1/2 cup brown sugar 1/2 cup chopped nuts 1/2 cup semisweet chocolate chips
1. Dry ingredients are layered in a jar and given, along with directions, as a gift. Use a funnel that has a 2-inch opening, to layer nicely in jar. With wire whisk, mix flour, baking powder, and baking soda. Pour into jar, pack down level with heavy object.
2. Mix oatmeal in a blender. Grate chocolate bar and mix into the oatmeal. Pack on top of flour in jar.
3. Add white sugar and pack down. Add brown sugar and pack down. Layer chopped nuts on top of brown sugar. Finish layering jar with mini or regular chocolate chips until even with the top (no more than 1/2 cup).
4. Use scissors to cut a 9 inch-diameter circle from calico. Place over lid and secure with rubber band. Tie on a raffia or ribbon bow to cover rubber band.
5. Label and store in a cool dry place away from a heat source so condensation and clumping does not occur.
6. Attach this recipe to the jar:
Chocolate Chip Fudge Cookie Preheat oven to 375 degrees F. Spoon chocolate chips and nuts into small bowl, set aside. Spoon brown and white sugar into mixing bowl. Add the following: 1/2 cup margarine or butter, cream well. Add: 1 egg 1/2 teaspoon vanilla Mix well. Pour oatmeal and flour mixture from jar into bowl, mix thoroughly. Roll into walnut size balls, place on slightly greased cookie sheet 2 inches apart. Bake for 8 to 10 min.

Black + White Chipper Cookies
1/3 c sugar 1/3 c packed brown sugar 1/3 c quick oats 2/3 c flour mixed with 1 tsp baking powder 2Tbsp chopped pecans 2Tbsp M&M's 1/3 c rice krispies 1/4 c chocolate chips 1/4 c white chips
Layer ingredients in order given in a 1 pint wide mouth Ball canning jar, using your hand when necessary to level. Press all firmly to fit. Mixture will just fill jar. Place lid on and add recipe card with instructions.
Place mix into large bowl, and blend dry mix together with your hands until blended. Add 1 egg(beaten) and 1/2 c butter flavor shortening to mix. Shape dough into walnut size balls. 2" apart on sprayed cookie sheet. Bake 350 for 10-12 minutes. Makes 24 cookies.

Butterscotch brownie mix in a jar
1/2 cup flaked coconut 1/2 cup white sugar 2 cups packed brown sugar 2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt
Directions: Mix together flour, salt and baking powder. Set asideLayer ingredients in order given in a 1 quart sized wide mouth canning jar. Add flour mixture last. Press each layer firmly in place.
Attach this message to jar: Butterscotch Brownies 1. Empty jar of brownie mix into large mixing bowl. Use your hands to thoroughly blend mix. 2. Add: 3/4 cup butter or margarine,softened at room temperature. DO NOT USE DIET MARGARINE. Mix in 2 eggs, slightly beaten and 2 teaspoons vanilla. 3. Mix until completely blended. 4. Spread batter into a sprayed 9 x 13 inch metal pan. 5. Bake at 375 degrees F (190 degrees C) for 25 minutes. Cool 15 minutes in baking pan. Cut brownies into 1 1/2 inch squares. Cool completely in pan. Makes 2 dozen brownies

BUTTERMILK-SAGE BISCUITS A nice little biscuit to serve with soups or stews
1/2 cup white cornmeal 1 1/2 cups all-purpose flour 2 tsp. baking powder 1/2 tsp. baking soda 2 tbsp. minced fresh sage, OR, 1 Tbsp crumbled, dried 1 1/2 tsp. freshly ground pepper 1/2 tsp. salt 6 tbsp. unsalted butter, chilled 2/3 cup buttermilk
Preheat oven to 425ºF. Grease or lightly coat a baking sheet with vegetable spray.
In a large bowl, mix the cornmeal, flour, baking powder, baking soda, sage, pepper, and salt. Toss with a fork or whisk to combine. Cut the butter into the bowl and mix with a pastry blender or your fingers.
Add the buttermilk and stir just until the dough holds together. DO NOT overmix.
With a 1 1/2-in. diameter round cutter, cut out the biscuits and place them, in a tight formation, on the baking sheet. If you have leftover dough scraps, press them together and cut out more biscuits.
Bake the biscuits in the preheated oven for 12 to 15 minutes, until lightly browned.
Makes about 30 biscuits.

CROCKPOT REUBEN DIP
8 oz. deli corned beef, coarsely chopped 1 cup sauerkraut, rinsed, well drained, and coarsely chopped 1 8-oz. pkg. cream cheese, softened 2 cups shredded Swiss cheese 1/2 cup thousand island salad dressing
Mix all ingredients in 1-1/2-3 qt. crockpot. Cover crockpot and cook on low for 4 hours.
Stir to combine and scrape down sides. Dip will hold for 2 hours on low.
Serve with party rye bread slices, pretzels, pickles and French bread cubes.

NAVY BEAN SOUP Serving Size : 6
1 pound great Northern beans, soaked 2 teaspoons salt 1 medium onion, chopped 1/8 teaspoon ground pepper 2 pounds beef short ribs 6 cups water 3/4 cup barbecue sauce
Place all ingredients in CROCK-POT except barbecue sauce. Cover and cook on Low 10 to 16 hours. Before serving, remove short ribs and cut meat from bones. Return meat to CROCK-POT. Stir in barbecue sauce before serving.

Brown and drain hamburger. Cook noodles and rinse in cold water. Layer in a 5 quart crockpot the following: hamburger, noodles, sauce, pepperoni, cheese. Repeat layers. Cook in crockpot on low for 5 hours.

Broccoli Rice & Chicken 2 pounds chicken tenders or boneless breasts cut in strips 1 1/4 cups uncooked converted rice 1 package Knorr's Cream of Broccoli Soup Mix 1 1/2 cups chicken broth pepper, to taste
Place rice in a lightly greased crockpot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.

Slow-Cooker Rustic Chicken Stew
2-lbs. boneless, skinless chicken breasts, cut into 1-in. cubes 3 medium onions, peeled, quartered 2 large carrots, peeled, cut into 1-in.thick slices 2 potatoes, peeled, cut into 1-inch cubes 2 cans (14-oz. each) fat-free, 1/3-less-sodium chicken broth 1 tsp. celery seed 1 tsp. dry thyme leaves 1/2 tsp. black pepper 8-oz. mushrooms, cleaned, halved 1 cup frozen corn 1 cup frozen peas
In a 5-to-6-qt. slow cooker, combine the chicken, onions, carrots, potatoes and broth. Stir in the celery seeds, thyme, pepper, mushrooms and corn.
Cover and cook on LOW until the chicken is done and the vegetables are tender, about 7 to 9 hours, OR on HIGH for 4 to 6 hours. Stir in the peas and cook until they're done, about 15 to 30 minutes longer.

Hot Raspberry-Orange Fruit Punch
This fruity punch provides a warm up for cool days and chilly night.
12 oz. frozen orange juice concentrate; thawed 12 oz. frozen raspberry juice concentrate; thawed 7 cups water 1/2 large lemon; sliced 1 cinnamon stick 2-3 oranges; thinly sliced
Combine juices, water, lemon slices, and cinnamon stick. Cover and cook on LOW 4-5 hours until hot. Remove lemon slices and cinnamon stick. Serve with orange slices floating on top. Makes 18, 1/2 cup servings.

Orange Creme
5 Orange flavoured tea bags 1 Peppermint tea bag 1 cup Boiling water 1 1/2 cups Orange juice 2 tbs Honey 1 scoop Vanilla ice cream (or frozen yogurt)
Add the teabags to the boiling water and steep for 5 minutes. Combine tea, orange juice, honey, and ice cream in a blender Mix until blended . Serve.

Apricot-Mint Tea
For a cool summer sipper, brew up a batch of this refreshingly fruity tea. To release the fresh mint flavor, crush leaves slightly with the back of a spoon.
4 cups cold water 10 tea bags 4 12-ounce cans apricot nectar 1/2 c. mint leaves, slightly crushed 1/4 cup sugar Fresh mint (optional) Citrus slices (optional)
In a 4-quart Dutch oven bring water to boiling; remove from heat. Add tea bags. Let steep for 3 to 5 minutes. Discard bags. Stir in nectar, mint, and sugar. Cover; chill 4 hours.
Pour tea through a strainer into a serving pitcher or punch bowl before serving. Pour tea over ice cubes. If desired, garnish with additional mint or citrus slices. Makes about 10 (8-ounce) servings.

FROSTY VIRGIN MARGARITAS
3 12-oz. cans frozen limeade 1 6-oz. can frozen orange juice concentrate-pulpy 1 6-oz. can frozen grapefruit juice 32 oz. Ginger ale 2 fresh limes, cut into 24 rounds
Pour half the juices and ginger ale into a blender. Add some ice cubes and blend; add ice until desired consistency. Repeat.
Serve in large goblets. Garnish with round of lime. (24 servings)

2 Pkgs. black cherry Koolaid(tm) 2 c. sugar 1 6 oz can orange juice concentrate 1 qt. cranberry juice 2 1/2 qts. water 1 qt. ginger ale
Mix all ingred, together except ginger ale. Just before serving add ginger ale and ice

Harvest SLUSH
1 pkg. lime gelatin 1 c. sugar 7-Up or gingerale 4 c. boiling water 3 c. pineapple juice
Mix all ingredients together except 7-Up. Place in container and freeze 4 to 5 hours. Remove from freezer when mixture is slushy.
Fill glasses 1/2 full of slush. Fill remainder of glass with 7-Up. This can also be used in punch bowl. Place all slush in (12 inch) serving bowl and add 2 quarts 7-Up or gingerale.

TUTTI FRUITY PUNCH
1 large punch bowl 1/2 c. fresh, frozen or canned lemon juice 1 (12 oz.) can frozen orange juice 1 c. pineapple juice 1/4 c. maraschino cherry juice 3 trays ice cubes 2 qts. chilled ginger ale 1 bottle maraschino cherries
Mix together and serve. More ice cubes can be added after all ingredients are mixed.
