2 cups flour 2 tablespoons sugar 1 teaspoon baking powder 1/4 teaspoon salt 2 eggs 1 1/2 cups milk Deep frying oil Powdered sugar
Mix up first 6 ingredients well. Have deep fryer ready. Using a kitchen funnel (or large cooking spoon), holding finger under the hole, fill the funnel with batter. Hold funnel over the hot oil, and allow batter to drop in hot oil, in any size pieces. Allow the *cakes* to brown on both sides, then dip out onto paper towels to drain. Then roll cakes in powdered sugar, and enjoy! My kids and Grandkids, has made these for years! great for Saturday morning breakfast!

Soften 1 cup of butter, and add 1 cup of sugar---cream well. Add 2 beaten eggs and blend. Add 2 cups all purpose flour, and blend. Add 1 cup chopped nuts, and blend again. Spread 1/2 of the batter in a 9 inch baking dish. Spread 1 cup of Strawberry jam over batter. Spread remaining batter over the jam, creating 3 layers. Bake at 325, for 45 minutes or just until browned Cool, cut in 2 inch squares.

2 1/2 cups flour 1/12 teaspoon soda 2 tablespoons cocoa 1 pinch salt 1 cup sugar 1 cup salad dressing 1 cup real hot water 1 1/2 teaspoon vanilla
Sift dry ingredients together. combine wet ingredients, then add to the dry ingredients, and beat well. Bake at 400 till tested done.

2 packages German Sweet Chocolate 1 tablespoon butter 2 eggs 3/4 cup sugar 1/4 cup unsifted all purpose flour 1/4 teaspoon baking powder 1/4 teaspoon cinnamon 1/8 teaspoon salt 3/4 cup chopped pecans 1/2 teaspoon vanilla
1. Melt chocolate and butter over hot water. 2. Beat eggs till foamy, then add sugar, 2 tablespoon at a time, and beat till mix is very thick, 5 minutes by high speed. 3. Blend in Chocolate mix. 4. Add flour, baking powder, cinnamon, and salt. 5. Stir in the pecans and vanilla. 6. Drop by teaspoons on greased sheets. 7. Bake at 350 for 10-12 minutes, or till set, when lightly touched. 8. Cool and store in tight covered container. Makes about 3 dozen.

Cream 1/2 cup butter, and add 1/3 cup sugar, 1/8 teaspoon salt, and 2 teaspoons vanilla. Combine 2 cups sifted flour, and 2 cups chopped pecans, then add to the butter mix. Mix well, then roll into slightly flattened balls, bake at 300 . till lightly browned. Roll in powdered sugar.

1/4 cup butter 3/4 cup light brown sugar(packed) 1/4 cup evaporated milk(Pet milk-Carnation, canned milk) 2 1/2 to 3 cups powdered sugar 1 teaspoon vanilla dash of salt
Melt the butter in a saucepan over medium heat, and add brown sugar and milk. Heat until the sugar dissolves. Cool slightly, then beat in the powdered sugar, vanilla, and salt. NOTE# Double the recipe for a 3 layer cake.

1 cup sifted All purpose flour 1/4 teaspoon salt 1/2 cup brown sugar, packed 1 egg 1 Tablespoon water 1/2 teaspoon soda 1/2 cup shortening 1/2 cup sugar 1/2 cup peanut butter 1/2 teaspoon vanilla
Mix all ingredients together with hands, blending well. Drop by spoons full, and press each one to flatten just a little, with a fork dipped in sugar. Bake at 325, 15-20 minutes. 3 1/2 dozen. Note# 1. I usually have to triple this recipe because they taste so good! 2. You can also make a thumbprint in the dough, and place some jelly or jam in the print.

part one--- 1/2 cup sugar 1/2 cup butter 3 egg yolks 4 tablespoons milk 1 cup flour 1 teaspoon baking powder Mix very well, and pour into 2 layer pans.(can substitute other sizes)
Part two--- 4 egg whites 1 cup sugar 1/2 cup chopped nuts(pecan or walnuts) Beat egg whites stiff, and adding 1 cup of sugar. Spread over the batter from part one, then sprinkle the nuts on both of them. Bake at 350 for about 30 minutes, or till done.
Part three--- Serve the baked cake with this custard sauce: 1/2 cup sugar 1 tablespoon flour 1 egg yolk 1 cup milk 1 teaspoon any kind of flavoring Mix ingredients well, and slow cook till it thickens.

1/2 cup shortning 2 cups sugar 2 eggs 2 1/2 cups self-rising flour 1 1/2 teaspoons soda 2 cups drained sour cherries(but save the juice for the sauce.
Cream shortning and sugar together---add eggs---beat well---add flour slowly. Add the soda to the cherries--they will turn dark, then add them to the batter.---fold in the nuts, and bake in 9X13 pan at 325, till done---serve with the following sauce: Using the 3/4 cup of the saved drained cherry juice---add 1/4 cup water, sugar to taste, and 1 1/2 tablespoon cornstarch. Cook till thick--then cool--Top with whipped cream.

1/4 cup butter or margarine 3/4 cup sugar 1 egg 1/2 teaspoon baking soda 1 tablespoon hot water 1 1/2 cups sifted enriched flour 1/4 teaspoon salt 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1 cup ground raisins
Cream the butter and sugar thoroughly. Add the beaten egg and mix well. Dissolve soda in the hot water, and add alternately with a sifted mixture of the flour, salt, cinnamon, and nutmeg. Stir in the raisins. Drop by teaspoons onto a greased cookie sheet, and bake in a moderate oven 375, 8 minutes. Makes 4 dozen.

1 1/2 cups cornmeal (white or yellow, but I prefer the yellow) 1/2 teaspoon salt 1/4 teaspoon soda 1/4 cup chopped onion 3/4 cup buttermilk 1/3 cup water
Combine dry ingredients, and the onion. Add buttermilk and water; stir just until completely moistened. Drop rounded teaspoons into deep hot fat at least 375 degrees. Fry until golden brown, about 2 minutes, (on all sides--turning them). Drain on paper towels, and serve hot. Makes about 40 hushpuppies.

Add flour, cornmeal, sugar, salt, baking powder, egg, and milk. Add cracklings and beat thoroughly. Bake in well greased (bacon grease)iron skillet, in hot(400) oven about 20 minutes. Note# You can also drop by spoonfulls onto a greased hot griddle, and fry to a golden brown. About 6 servings.

Sift flour and then measure, and sift again with baking powder and salt. Work in the butter and cheese with tips of fingers. Add milk and mix quickly and lightly. Drop by spoonsfull on a greased baking sheet. Bake in a hot oven at 450, for 12 minutes. Serves 8.

CINNAMON ROLLS: Make up your favorite biscuit dough, then roll out in a sheet about 1/2 inch thick. Spread with melted butter, and sprinkle thickly with cinnamon and brown sugar. Then roll up like a jelly roll, and cut off slices about an inch thick.
BUTTERSCOTCH ROLLS: Using the prepared cinnamon rolls above--heat 2 tablespoons butter, 1/2 cup brown sugar, and 1/4 cup water in a baking pan, until the syrup forms a soft ball in water, or 236 degrees.---let that cool, then add 1 cup chopped nuts, and place cinnamon rolls in the syrup, cut side down, --bake at 400---8 servings

1 cup cold mashed potatoes 1/2 all purpose flour 1 egg salt and pepper to taste about 2 quarts of a stew or soup
In a medium bowl, mix together, the first four ingredients, to form a stiff dough. Roll the dough out and cut it into 2 inch square dumplings. Bring the soup or stew to a boil. Drop the dumplings into the boiling stew or soup. Cover and simmer 10 minutes. Serves 4-6.

Sift flour, measure, and resift with the spices, baking powder, and salt. In another bowl mix egg, sugar, shortening, and milk. Add dry ingredients to this mix, and beat only until smooth. Grease muffin tins and fill 2/3 full. Bake at 425, 15-20 mins. Makes 12.

1/2 cup margarine 1 minced onion 1 minced green pepper 2 chopped pimentos 1/4 to 1/2 teaspoon crushedred pepper 1/2 teaspoon salt 1 Tablespoon chili powder 1 cup cooked or canned small peas, drained 1 -3ouncecan sliced mushrooms, drained 2 -8ounce cans tomato sauce 4 lightly beaten eggs 1 teaspoon water dash salt 1 tablespoon margarine
1. Melt the 1/2 cup of margarine in saucepan. 2. Add onion, and green pepper, and cook on low heat till tender. 3. Add pimento, red pepper, 1/2 teaspoon salt, and chili powder, and stir. 4. Add peas, mushrooms, and tomato sauce, and mix. 5. Cook on low heat 5 minutes. 6. In a bowl, combine eggs, salt and water. 7. In a skillet, melt the 1 tablespoon margarine, and add the egg mix. Cook on low heat lifting edges to let the uncooked egg flow to the bottom. 8. When set, but soft on top, add 1/2 the sauce mixture, and roll up. 9. Turn omelet out onto a warm serving platter, and serve with remaining sauce.

Hint# -To *center* the yellow in hard-cooked eggs, gently stir the eggs, keeping them in motion, for the first 6 or 7 minutes of cooking.
6 hard-cooked eggs, shelled 1 tablespoon cream or Mayonnaise dash of pepper 3/4 teaspoon prepared mustard 1/4 teaspoon salt 2 teaspoons pickle relish, plus 2 teaspoons of the liquid
Cut eggs in half lengthwise, (can make zig-zag cuts all the way around so when egg is seperated, the edges are scalloped). Remove the yolks, and force through a sieve. Add seasonings and beat till smooth and fluffy. Refill the egg whites, and garnish with a dash of paprika, chopped parsley, or chopped chives. Other garnishes: stuffed olives, tiny pearl onions, slivers of onion, or bits of pimento, or crisp bacon.
#NOTE: for a slight different recipe--leave off the pickle relish and liquid, and substitute 1 1/2 teaspoon vinegar, and 1/2 teaspoon worcestershire sauce.

Linda, I think it has to be based on what has been cooked in it. How long *future* you mean. Yes, I reuse oil, I strain it and keep it in canning jars and label with what was cooked in it, but I try to use it up in a fair amount of time. Like if you deep fry onion rings, and save the oil---you would only want to use it in cooking something where you will be using onion, because it retains some of the flavor of what was cooked in it. If you mean shortening, there is a very old way to clean it. You pour the grease in a saucepan and fill the pan part way with water, set it on the burner, on medium to low heat, just to gently boil. Let boil maybe 5 -10 minutes, then set off the burner to cool. When the grease has, I guess the word is congealed?---you can skim your grease off top, and drain, to get remainder of water out. Then you will see in the bottom of the pan will be the small scraps of food and debris left from cooking--you have clean grease to reuse. My GreatGrandmother and GreatAunts did this in a day when money was very scarce. Hope this helps in some way. Mamie

3 pounds ground beef 2-3 small onions sliced 2 cloves of garlic, minced 2-3 tablespoons vegetable oil 3 cans crushed tomatoes 1 can water(I usually rinse all cans into one) 3 tablespoons chili powder 2 teaspoons cumin 1 dash of hot sauce(if you like hot add more.) 3 cans hot chili beans(I use Brooks brand)
1. In iron dutch oven/large iron pot---put in vegetable oil, and brown the ground beef, onion, and garlic. Then drain. 2. To the beef mix add the crushed tomatoes, water, chili powder, cumin, and hot sauce. Cook 45 minutes, about medium to medium low heat, with a lid on. Stir often. You want it to simmer well, but not boil. 3. Add hot chili beans, and simmer another 15 minutes.
This recipe will fill an iron dutch oven.

2 pounds ground beef 1 medium onion, sliced 1 small bottle of a hickory smoked flavor Bar-B-Q sauce ( like Maul's Sweet and Smokey flavor) 1 scant pinch of red pepper flakes if the flavor is not spicy enough for your taste.
Brown ground beef, onions, and then drain. Add BBQ sauce, and simmer at least 15 minutes. Spoon onto buns and enjoy. My Grandkids like to add mozzarella cheese on top.

1 can corned beef 1 small chopped onion bacon grease(about 1/2 cup) flour(about 1/2 cup) water(about 2 cups)
Place bacon grease in skillet, add the onions and heat well. Crumble in the can of corned beef, and finish breaking up remaining large chunks as it simmers. Add flour, and simmer till dissolved. Add water and simmer for maybe 10 minutes, should be thickened like gravy. Spoon over toast. Very low cost meal. Serve with fried potatoes greenbeans, sliced tomatoes, and cornbread.

1/2 cup all-purpose flour 2 teaspoons paprika 1 teaspoon salt 1 pound round steak, 1/4 inch thick, sliced in strips. 1 small sliced onion 2 tablespoons margarine 1 cup water 6 small peeled and halved potatoes 6 small peeled carrots
1. Combine flour, paprika, and salt , blend well. 2. Dip steak stripes in the flour mix. 3. Heat a pressure cooker, and add margarine, meat and onion, brown evenly. 4. Add water, potatoes, and carrots, close cover securely. 5. place pressure regulator on pot and cook 12 minutes slowly. NOTE#-This can be cooked in a 3 quart casserole in the oven at 350 degrees for one hour. This serves 4-6.
